BAIGAN KA BHARTHA (BRINJAL ROASTED)

Its been few days since I have been not posting anything except for the awards.  Its been really busy these days with my sweet little princess.. She is becoming very naughty these days. Kids you know they are more naughtier as they grow up.. Tmw my princess is turning 5 months... God! time flies so fats. I still remember how the days were when she was gven to me soon after birth :).....like said time flies so fast u never know what happens next :)...

This recipe is too good to be eaten woth rotis :).... try and u will come to know what I mean ;)

Ingredients :
Baigan - approx 4-5 nos (roasted. If using large - 2 nos)
Cumin seeds - 1 tsp
Onions - 2 large nos ( chopped finely)
Ginger paste - 1 tsp
Green chilli - 2-3 nos chopped
Tomatoes - 2 med chopped
Chilli Powder - 1 tsp (Kashmiri chilli powder)
Turmeric Powder - 1/2 tsp
Garam Masala - 1 tsp
Salt
Coriander leaves - for garnish

First roast the baigan over flame with a stick or knife inserted into the brinjal. You will see charcoal skin on th outside when done nicely. Make sure the brinjal is rotated every 2-3 seconds to make sure the brinjal gets roasted evenly on all the sides as shown in pic



Then when the brinjal cools down, remove the charcoal skin and smash nicely the brinjal. Keep aside.


In a pan, add oil, then add in the cumin seeds. Once seeds splutter add in the chooped onions and ginger paste. Saute till almost onions turn pinkish brown in color and then add in the tomatoes and green chillie. Saute well till tomaotoes are smashed propoerly. then add in the chilli and turmeric powder. Saute on low flame for about 1-2 minutes, and then add in the smashed brinjal. Add salt and cover and cook for about 3-5 mins. Keep stirring in between once or twice.Then sprinkle garam masala cover and cook agian for 5-7 mins. In between dont forget to stir. Squeeze lemon juice over and granish with cilantro leaves, serve hot :)
