BROCOLLI ALMOND SOUP

Brocolli Almond Soup



This recipe is high in protein and its tastes mcuh better than eating it boiled. Brocolli is somethign which most people dont prefer to have. This way to dont lose any nutrients of it as taken as whole. Since this is my favourite, i often make this at home which at times goes as breakfast too. Try it and you will see what I am trying to say :)

Ingredients :

Brocolli with stem - A medium
Almonds slivered - a handful
Milk - 1 cup ( use low fat or skimmed for healthier version)
Celery - 1 tsp chopped
Garlic - 1 tsp chopped ( optional)
Onion - 2 tbsp chopped
Cornflour - 1 tsp
Salt
Pepper
Butter/oil

Preparation :
Clean the brocolli nicely and remove the stem and florets seperately. Cut the stem into medium pieces and in 2 cups of water boil them till almost done. Dont overcook them. Then add in the florets, celery, onion and garlic and cook for about 10 mins on low flame. Once cooled blend the mixture to a puree.

Meanwhile in a pan add a little butter (oil) and saute almonds. Keep a few back for garnishing. Add in the the blended mixture and bring to a boil.

Mix cornflour in 1 tbsp milk. Add rest of the milk to the boiling mixture and bring again to boil. Simmer the flame and add in the cornflour mix. Add salt and pepper. Stir and cook for another 5 mins or so till the soup thickens. Serve hot and garnish with the slivered almonds kept aside.

RADISH-ONION SALAD

Radish-Onion Salad





Ingredients :


Red Radish - 4 nos chopped
Onion - 1 med chopped
Green Chilli - 2 nos chopped
Tomato - 1/2 chopped
Coriander Leaves- half of handful
Sesame Oil - 1 tsp
Salt to taste


Heat oil in a pan, saute radish and onions for about 1-2 mins on low flame.once cooled move it to a bowl. Add in coriander leaves, tomato, green chilli chopped and salt. Serve chilled :)

TABOULEH (ARABIC SALAD)

Tabouleh






This salad is widely used in the middle east especially with lebanese food. I always loved this salad and always wanted to make on my own for ages. Today as I got time I searched through few websites and u know what!! its as simple as it looks :).. so here goes the tasty and very healthy recipe :)


Ingredients :


Parsley - around half cup chopped finely with stems avoided
Mint leaves - around 6-7 leaves chopped finely
Bulghar - 1 tsp soaked for 1 1/2 - 2 hours (wheat)
Tomato - 1/4 piece chopped finely
Onion - 1/4 piece chopped finely
Pepper - a pinch grounded
Lemon juice - 1 tsp
Extra virgin olive oil - 1 - 2 tsp as per ur taste
Salt


Preparation :


Once soaked and soft, dry the bulghar with cloth or press lightly with your hand to remove the excess water. Mix all te ingredients and chill for about an hour before serving so that all the flavour gets locked into the salad. My quantities are very less in this as I had very few parsley leaves left behind. Be free ot add any veggie to this like cucumber and carrot. The salad available in dubai are mainly of only parsley, lemon juice,olive oil, salt, tomato and bulghar. So this is my version :)..

POTATO GREEK SALAD

Potato Greek Salad


Something healthy on the house?? hmm how about a salad :) try this out :)


Potato - 1 no
Parsley - 1/2cup
White Pepper - 1 tsp
Onion - 1/2 finely chopped
Capsicum - 1/2 chopped
Mayonnaise - 2 tbsp (low fat)
Olive Oil - 2-3 tbsp
Salt


Boil and peel potatoes and cut into cubes. Mix all the ingredients and serve :)..
I used here 1/4th of yellow and red capsicum for color. You can use green capsicum instead of these.

BOONDI RAITHA

Boondi Raitha


This will make an excellent dish for chappati and parathas :)


Ingredients :

Boondi - 1 cup
Curd - 1/2 litre
Cumin Powder - 1/2 tsp
Chille Powder - 1 pinch
Malli Ella (cilantro) - 1/2 cup
Black Salt or Salt - to taste
Paprika Powder - for garnish


Preparation :
Beat the curd and add in all the rest of the ingredients. Keep aside for about 20-30 mins as boondi has to get soaked in curd. Serve chilled :)


P.S : You can add water to the curd if you need a loose consistency...
