MATHANGA ERISSERY (Pumpkin Smash)

(guys the pumpkin is actually rich in yellow color. Due to the light the erissery looks lighter :(.. )


Pumpkin is known for its beautiful color and as its color shows, the sweetness too. I never used to like pumpkin when i was small coz of its sweetness. But now i love it!!!... thats how we all are... when we stay where we cannot get these..then we crave for it and we eat like it as if we havent eaten for years :D... so here goes the recipe....


Ingredients :


Pumpkin - 2 cup
Turmeric Powder - 1/2 tsp
Salt


For grinding:
Grated coconut - 1 - 1 1/2 cup
Cumin seeds - 1 tsp
Green Chillie - 3-4 nos
Garlic - 1 large no (opt)




For the Tadka:
Mustard seeds - 1 tsp
Shallots - 4-6 nos
Red chilli - 2 nos
Curry leaves - 2 strings
Grated coconut - 1 tbsp
Coconut Oil




Preparation :


Cook the pumpkin with salt, turmeric powder and water in pressure cooker till pumkin is cooked. Once cooked smash them with the ladle (Water level should be little bit above the pumpkin pieces).


Meanwhile grind all the ingredients to a paste in a grinder. Add little water if needed.


Add these to the cooked and smashed pumpkin. In another pan fry the grated coconut till brown and keep aside. Then in same pan, add a little coconut oil and add in the mustard seeds. Once spluttered, add in the shallots, fry for a min. Add in the red chilli and curry leaves and saute for 1 min and mix it with the pumpkin mixture together with cocnut fried. Check if salt if needed. Serve hot or chilled with rice :)

erissery is one of my fav...Your version sounds bit different form mine, with garlic..Would love to have this with some hot rice and thoran....
