PAZHYAM PAYASAM (PLANTAIN KHEER)

Pazhyam Payasam



HAPPY B"DAY!!!!!!
Yest 4th of feb was my best friend's (Vidya Gopalakrishnan) birthday. At present she is in US and actually I didnt know what gift I would give her being at a long distance. I was really thinking hard and thought the best way is to dedicate, is through cooking :). She is the sweetest friend I have had ever in my life and the best thing would be to make payasam (kheer) that is as sweet as her and here it is :)


Ingredients :


Ripe Plantains : 2 nos (250gm)
Jaggery : 250gm approx
Coconut Milk
Coconut pieces
Nuts
Raisins


Preparation :


First extraction of the coconut milk - Take 1 whole coconut grated and blend it in a blender. We need here 3 extracts.
1st extract - 1cup
2nd extract - 1cup
3rd extract - 1 1/2 cup
Keep aside the cocnut milk and steam the plaintains till they are cooked. Then in a chooper or with hand mash the cooked plantains till no lumps are formed.

Then in a pan with little water melt the jaggery and keep aside. Now in another thick bottom pan heat ghee and add in the blended plantain and melted jaggery and saute till it becomes thick. It should be very thick (varatti edukanam). Then add in the 3rd extract and cook till it beocmes thick. Keep sauting so that it doesnt dry up at the bottom. Then once thickened add in the 2nd extract and cook for 5-7 mins. Then add in the 3rd extract and switch off flame. Fry the cocnut pieces, nuts and raisins in ghee and add on to the payasam and VOILA your sweet payasam is ready!!!... hai na easy :)
