SABUDANA KHEER

Sabudana Kheer


Sabudana Kheer isone of the most favoured dish for fasting and the mostly used dish is the maharashtrians. Its so nice to see the bubble like form over the milk :)..i m sure kids will love it :)


Ingredients
Sabudana (chowwary) - 1 cup
Milk - 4-5 cups
Saffron - 4-5 strands
Elachi powder - 1 tsp or as per your taste
Sugar - 2 tbs or as per your sugar level
Ghee - a pinch
Roasted nuts & raisins - for garnish


Soak the Sabudana for almost 5-7 hours. For big sabudana 5-7 hours is needed to be soaked and for small ones, approx 15-20 mins is needed. I would prefer big ones over small ones.


Once soaked and done,clean the sabudana, drain and keep aside. Boil the milk with the saffron strands in and then add in the sabudana and ghee. Simmer the flame and cook till sabudana is soft and easily pressed between fingers. You can see that sabudanas have now become nice transparent balls. Once the kheer has reached your consistency of thickness garnish with nuts and raisins roasted in ghee. Serve hot or cold :)
