This is a famous sweet of gujarathi.. Me being a hard core keralite at first didnt know what dhokhla was. At first time in dubai when i had it with a friend of mine, i actually didnt like it..can u believe it!!!!.. then another day I ahd this in one of my family friends house. They were Maharashtrians. The instant i ate this I fell in love with it :)..From that onwards i have recipe in my mind to make it and finally i did. Its very less time consuming and as soon as it was amde i could hardly see it in the plate for more than 15 mins :)...poof vanished!!.. planning to make again this weekend :)...
Ingredients:
Besan - 1 1/2 cup
Curd - 1/2 cup
Carbonate soda - 1/2 tsp
Water - 1/2 cup
Tumeric powder - a pinch
Sugar - 1 tsp
Lemon Juice - half of a small lemon
Eno(lime flavour)- 1 sachet
Salt - to taste
For Tempering:
Mustard seeds - 3 tsp
Sesame seeds - 2 tsp
Curry Leaves - 3 strings
Green Chilli - 4 nos (chopped)
4 tbsp of oil + 2 tbsp of water to put on top of dhoklas.
Preparation :
Mix 1/2 curd and 1/2 cup water and beat them properly. Then add in the besam slowlly and keep oin mixing to get a batter like that of a dosa battera shown in pic. In case you find its too thick you can add little more water. Make sure the batter is not too loose. Then add in the carbonate soda and mix and keep aside to rise for 1 hour.
Once risen, in a pressure cooker add enough water to steam the batter. To the batter add in the eno, salt, sugar, turmeric and lime juice and mix and pour into the pan that comes with he pressure cooker. The batter rises after steamed so make sure the batter is not put till top. Half or 3/4 will do. Then put the lid w/o pressure and steam for about 7-8 mins. To check if dhokla is done remove lid and prick andsee with a knife or toothpick and if it comes out clean then its done. The same method you use to check for a cake batter. Make small small pricks on the dhokla and then pour over the oil + water mix liberally all over.
Once cooled cut then out gently and serve as it is or with chutney :)

P.S : Some people add in green chillie paste of 1 or 2 chilli to the mix. But I havent added here. Still it tastes excellent :D.
