LEMON RICE
INGREDIENTS :
Basmati Rice - 2 cups
Urad Dal - 1 tsp
Channa Dal - 1 tsp
Fenugreek Seeds - 1/2 tsp
Red Chiili - 2 nos
Asafetida - a pinch
Mustard Seeds - 1 tsp
Plain Peanuts - 1/2 cup (roasted)
Curry Leaves - 2 strings
Turmeric Powder - 1 tsp
Lemon Juice - 2 lemons ( can change quantities according to your taste)
Oil - 2 tbsp
Salt to taste
Water
Preparation :
Soak the basmati rice for around 20 mins. Once cleaned add in lots of water with salt and cook till rice is done. Drain and kep aside.
In a kadai, heat oil, add in asafetida, red chillie, urad dal, channa dal, and fenugreek seeds. Saute till the dals become brown in color. Then add in the mustard seeds and curry leaves. Wait till it starts spluttering and then add in the peanuts. Saute the peanuts ( it must be roasted well otherwise it will taste raw) for about 2 mins and then add in the rice turmeric powder and salt if needed. On low flame mix all together till done. Serve hot or cold with raitha. pickle and pappad :).
(You can also do the spluttering of mustard seeds in the initial stage itself)
