PAVAKKA (BITTERGOURD) THEEYAL

The name of bittergourd itself makes us think yuck its sour. But like everyone says, its the one of the veggies that contains a lot nutrients and the most iron content. :).. I am a person who prefers white bittergourd more than green coz of the less sour taste. But this recipe makes me eat the curry somehow more than I usually do coz the sour taste reduces in the tamarind and coconut micture :)


Ingredients :
Bittergourd - 2 nos sliced
Onions or shallots - 2 cups sliced
green chillie - 2 nos sliced
Shredded coconut - 2 cups
Chillie powder - 1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 3/4 tsp
Tamarind - lime size soaked in water
Oil


Tempering


Mustard seeds - 1 tsp
Curry leaves - 2 strips
Red chillie - 2 nos




Preparation:


Heat oil and once hot, add in the onions, green chilli and bittergourd pieces and stir and cook till the raw taste of bittergours pieces are almost gone. (dont fry the pieces).


Meanwhile in a pan add int he coocnut and fry til light brown and then add in the powders and stir for minue or two on low flame. Then grind the mixture and keep aside. Once the bittergourd are done add in the grinded mixture and saute.


Press the tamarind inside the saoked water to get the tamarind juice. add in the jiuce to the sauted bittergourd. Cook for about 4-5 mins on low flame. Add in more water if gravy is needed.


In another pan add coconut oil of about 2 tsp and splutter mustard seeds, curry leaves and red chillie. Saute for about 5-6 seconds and pour over the bittergourd theeyal :) Enjoy hot with rice :)
