Vanpayar- Chena Eriserry
Yummy yummy curry to have hot steaming rice.. Simple to prepare and especially when you are out of other veggies :D
Vanpayar - 1 cup (red chouri)
Chena - 1/4 piece cut into small cubes (yam)
Turmeric Powder - 1/4 tsp
Coconut grated - 1/2 cup
Cumin seeds - 1 1/2 tsp
Green Chilli - 1-2 nos
Onion - 1 medium chopped finely
Red Chilli - 2 nos
Curry leaves - 3 twigs
Mustard seeds - 1 tsp
Coconut Oil - 2 tsp
In a pressure cooker addin the vanpayar, turmeric and salt and pressure cook till vapayar gets half cooked. Approx of 3 whistles. Then once cooled add in yam and pressure cook for 2-3 whistles more. Check if yam and vanpayar is cooked. If not pressure cook till cooked.
Meanwhile grind with very little water all the ingredients listed under grinding.
Once presure cooking is over add in the grinded ingredients and cook on low flame till it boils. Switch off flame.. Add in water if the consistency is too thick.
In a pan, add in coconut oil, once hot put in the mustard seeds. Once the seeds start spluttering, add in the onions and red chilli. saute till onions beocme slightly brown in color.Add int he curry leaves and saute for 1 min. temper on the cooked curry and serve warm with rice and ghee on top :)..yummyyyy...
